Okra with tomato sauce

  • Okra (fresh)  400 g
  • Olive oil   3 tbsp
  • Onion  80 g
  • Garlic  2 cloves 
  • Diced tomatoes (tinned)  400 g
  • Sugar  1 tbsp
  • Lemon juice  1 tbsp
  • Coriander (chopped)  3 tbsp
  • Salt 


  • Wash vegetables. Peel and chop the onion and garlic. Remove the stalks from the okra. Heat the oil in the pan and fry the onion and garlic until they turn golden brown. Add the okra and fry for 5 minutes. 
    Add the tomatoes, sugar, salt and lemon juice and simmer for 5 minutes. Sprinkle with coriander. 
    Serve with rice or low-protein rice.
