Low Protein Minestrone soup

  • Vegetable stock  1 l
  • Carrots  100 g
  • Green beans (frozen)  100 g
  • Tomatoes  100 g
  • Leek  50 g
  • Celeriac  50 g
  • Rosemary sprig, basil, pinch of sugar 
  • Homemade noodles  (or 120 g uncooked low-protein noodles)  400 g


  • Bring the stock to a boil. Wash vegetables. Peel the carrots and celeriac and cut them into thin strips. 
    Remove the seeds from the tomatoes and cut the tomatoes into strips. Cut the leek into rings. 
    Cook the vegetables and herbs in the stock for 10 minutes. Cook the noodles in salted water in a separate saucepan. 
    Add the prepared noodles to the soup.
