Wash and peel the vegetables. Cut and coarsely dice the pumpkin and the sweet potatoes. Chop the onions, ginger and garlic. Heat the oil in a saucepan and sauté the onions and garlic in it. Add the pumpkin, sweet potatoes and raisins and fry briefly. Season with turmeric, ginger, cinnamon, saffron, harissa and pepper. Add the vegetable stock and simmer with the lid on for 15 minutes. Serve with coriander. TIP: Ground ginger is also available.
