BLINI (Russian pancakes)

Ingredients
- Wholemeal buckwheat flour 25 g
- Low protein flour 80 g
- Baking powder 1 tsp
- Rapeseed oil 1 tbsp
- Cream 50 ml
- Mineral water (carbonated) 100 ml
- Sugar 3 tbsp
- Pinch of salt
- Sour cream 30 g
- Cranberries in a jar 4 tbsp
Preparation
- Mix the flour, buckwheat flour, sugar, salt, baking powder, oil and mineral water with an electric mixer until smooth. Leave the batter to settle for approx. 10 minutes. Meanwhile, preheat a non-stick frying pan. Pour the batter into the pan in portions and fry without fat until it is golden brown on each side. Serve with sour cream and cranberries.
